Awesome Crock Pot Recipe

I love a crock pot. For at least 3 years in a row, I asked for one with a timer on it for Christmas. Yet, I never received one. They had one on Black Friday for $15 or $20, and I picked it up. My mom had the marvelous idea of wrapping it to Ryan because as she said, "Well, he eats!" So, in Ryan's crock pot, I made the most marvelous recipe from Recipezaar. Be forewarned. It doesn't look appetizing. Therefore, there are no pictures for this post. LOL.

I served over rice, with tortilla chips. Ryan liked his wrapped in a soft flour tortilla.

Crock Pot Chicken W/ Black Beans and Cream Cheese

SERVES 4
Ingredients

* 4-5 boneless chicken breasts
* 1 (15 1/2 ounce) can black beans
* 1 (15 ounce) can corn
* 1 (15 ounce) jar salsa, any kind
* 1 (8 ounce) package cream cheese

Directions

Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.

add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.

Keep in crock pot on high for about 4-5 hours or until chicken is cooked.

Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.

All done and enjoy!

Oooh, that sounds delicious! I tried a similar one from Reader's Digest. It's the same thing just with cheddar instead of cream cheese. I'll try cream cheese next time.

I drained the juices off before adding the cream cheese. I definitely recommend that. Some wise reviewer on Recipezaar suggested that.
